1、 Plum wine history

Plum wine originated from Japan, plum originated in China, and later spread to Japan. In the Edo period, plum was the food and medicine of every family, and was widely planted. Because Japanese culture thinks that plums are not good omens and dried plums are often not properly preserved, plum wine, as a method of storing plums, has gradually spread.

2、 Plum wine -- raw material & production process

The raw materials of plum wine are very simple: plum, base wine and sugar.

From the perspective of plum, plum wine is divided into green plum wine and ripe plum wine. As the name suggests, green plum wine uses immature green plum as raw material, while ripe plum wine uses yellow ripe plum as raw material. In addition, the origin and variety of plum also determine the flavor of plum wine, the most common are nangaomei, yingsumei, baijiahe Mei.

From the perspective of base liquor, plum wine can be divided into Shaojiu, Japanese liquor and brandy. With Shaojiu as the base liquor, the aroma of plum wine is quite different; taking Japanese wine as the base liquor, such as sake, because of its low degree, it takes a very long time to soak, the taste of sake will blend with the taste of plum, the aroma and taste are excellent, so it is a top-grade plum wine; brandy as a base wine, will have a sweet fragrance.

Usually, the sugar used in plum wine making is rock sugar, not granulated sugar. Because of the slow melting of rock sugar, it will slowly penetrate into the plum, plum wine color is golden. You can also use honey or black sugar to soak plum wine.

After cleaning and treatment, the material can be sealed and soaked for about six months.

3、 Plum wine - taste

The base liquor used in plum wine is usually distilled wine. Generally speaking, distilled liquor will be choking. However, the addition of plum not only reduces the choking of distilled liquor, but also makes plum wine not only sweet and soft with fruit flavor, but also has the intensity of distilled wine, and the taste is full of hierarchy, which makes people feel reluctant to stop.

4、 Plum wine -- efficacy

The malic acid, picric acid and other ingredients in plum are blended into the wine during the soaking and fermentation process. Plum wine has a very good appetizing effect. The sour and sweet taste can promote gastrointestinal absorption, promote blood circulation and relieve constipation.

In addition, if the skin becomes rough because of drying or exposure to the sun, you can also apply a layer of plum wine on the skin surface to make the skin smooth and delicate again.
